This pasta is not actually Christmas food. Or is it? The cod you use is expensive enough. But for me it’s more of a meal that you cook after everyone has left. You put on your most festive pajamas and enjoy the quiet night.
Depending on the cooking time stated on the package, cook the pasta al dente.
Meanwhile, finely chop the light green spring onions, peel and finely dice the carrots. Sauté both in a large pan with thyme leaves and salt in a little olive oil while stirring. After about 3 minutes, deglaze with pastis. Let it evaporate, continue to steam the vegetables for a few more moments, and if they start to stick to the bottom, add a little (pasta) water, but not too much.
