Spanish turrón nougat is a pleasure to sink your teeth into. This version is softer. The dentist loves that, so he too can have Christmas off.

I have nothing against crunchy foods. But with the classic nougat turrón from Alicante, I immediately understand why dentists are… Spain not have to worry about customers. Because the original, rock-hard almond mass is not for those with weak teeth. Luckily there is also a softer version, the Turrón de Jijona. I tried it for the first time in Spain and I’ve been a fan ever since.
Now comes the problem: I love blanched almonds. So why not a turrón recipe with the best of both worlds? Nougat, soft like in Jijona, but with a few whole almonds for the right bite, like in Alicante. That’s how this recipe came about.
