I love cheesecake. Especially when made with cream cheese. But if I’m being honest, sometimes cheesecake can be a bit boring. A few weeks ago I was in Paris again and could hardly believe my eyes: on the menu of a small bistro in the 17th arrondissement there was a cheesecake – but made from goat cheese. I’m a big fan of goat cheese, but somehow I still thought: This can’t taste good. So I had to order it, logically, and I was blown away. Creamy, light, slightly tart, plus a base that holds everything together perfectly.
